Sticky lemon rolls bundt cake with lemon cream cheese glaze / Bundt cake de rolls de limão, com icing de limão e queijo creme.


As Mena shared here, this month bundtmania's theme is sweet rolls with a twist but with a bundt cake shape.
Even if I know that a bundt cake should have a hole in the middle, although my new bundt tin doesn't have that hole, it belongs to the bundt tin range and therefore, I decided to use it.
I chose lemon rolls for my bundt cake as, like we all know, I'm a lemon mad and totally addicted to this citrus.
Although I made my rolls in a cake tin, you can make them in a tray, like usual and how they should be made.
ingredients (makes 12 large rolls):
3 large lemons, at room temperature
3/4 cup milk, lukewarm
2 1/2 tsp dried yeast
1/2 cup unsalted butter, very soft
1/4 cup sugar
2 tsp vanilla extract
4 to 4 1/2 cups plain flour (I just used 4 cups)
1/2 tsp salt
1/2 tsp grated nutmeg
2 large eggs
for the lemon filling:
1 cup sugar
1/4 tsp grated nutmeg
3 tbsp unsalted butter, very soft
for the lemon and cream cheese glaze:
100g cream cheese, softened
1 cup icing sugar


method:
Zest and juice the lemons. Divide the zest into 3 equal parts and set aside.
Pour the milk into the bowl of a stand mixer fitted with the paddle attachment.
Sprinkle the yeast over it and let the mixture sit for a few minutes or until foamy. Stir in the butter, sugar, vanilla and 1 cup of the flour.
Stir in the salt, nutmeg and 1/3 of the lemon zest and after that, stir in the eggs.
Slowly add enough of the remaining flour until a soft and sticky dough forms.
Switch to the dough hook and knead for about 5 minutes or until the dough is elastic and pliable.
Lightly grease one bowl with oil. Form the dough into a ball and turn it around int he bowl to coat with the oil. Cover the bowl with a towel and let the dough rise in a warm place for 1 hour or until doubled in size.
Meanwhile, make the filling.
In a small bowl, mix the sugar with the nutmeg and then work in the second third  of the lemon zest with the tips of your fingers until the sugar resembles soft sand.
Slowly drizzle in a few tablespoons of the lemon juice and stir.
Stop when the sugar and lemon juice form a thick, clumpy mixture and looks like wet sand.
Set the filling aside.
Lightly grease a 22 x 33cm baking tray. (I greased my bundt tin).
On a floured surface pat the dough out into a large rectangle (about 25 x 38cm).
Spread the dough with the 3 tbsp of butter, then spread the lemon and sugar mixture all over the top.
Roll the dough up tightly and pinch the roll tightly shut.
Cut the rolled dough into 12 rolls, pinch the cut side on the bottom of each roll closed to help keep the lemon filling inside and place the rolls, cut side up, in the prepared baking tray.
In my case, I spiralled the rolled dough into a snail shape, crimped the end into the snail and put it inside the bundt tin.
Cover the tray or tin with a towel and allow them to rise dor 1 hour or until nearly doubled in size.
Heta the oven to 180ºC and bake the rolls for 35 minutes or until firm and golden on top.
To prepare the glaze, whip the cream cheese until light and fluffy.
Add 1/4 cup of the remaining lemon juice and blend until well combined.
Add the icing sugar and blend until smooth and creamy.
When the rolls are baked, smear them with the cream cheese glaze and sprinkle with the remaining third of the lemon zest.
I mixed my third of the lemon zest into the cream cheese glaze.
Allow the rolls to cool for 10 minutes before serving, but serve them warm.

Embora um dos requisitos de um bundt cake seja o facto de o mesmo ter um buraco no meio, eu decidi usar a minha nova forma da Nordic Ware que, não tendo buraco no meio, está descrita como fazendo parte da colecção das formas bundt.
Claro que, sendo eu uma "lemon lover", o sabor escolhido para o meu bundt foi o limão e que maravilha que ficou em termos de sabor.
Embora estes rolls tenham sido feitos em forma de bundt, podem fazê-los num tabuleiro, da forma tradicional.
ingredientes (para 12 rolls grandes):
3 limões grandes, à temperatura ambiente
3/4 chávena de leite, morno
2 1/2 colheres chá de fermento biológico seco
1/2 chávena de manteiga sem sal, muito mole
1/4 chávena de açúcar refinado branco
2 colheres chá de extracto de baunilha
4 a 4 1/2 chávenas de farinha de trigo branca (eu só precisei de usar 4 chávenas)
1/2 colher chá de sal
1/2 colher chá de noz moscada ralada
2 ovos grandes (L)
para o recheio de limão:
1 chávena de açúcar
1/4 colher chá de noz moscada ralada
3 colheres sopa de manteiga sem sal, muito mole
para o icing de queijo creme e limão:
100g queijo (tipo Philadelphia), amolecido
1 chávena de açúcar em pó


preparação:
Raspar a casca dos limões e espremer-lhes o sumo.
Dividir a raspa em 3 partes iguais e reservar.
Na taça de uma batedeira eléctrica, equipada com a pá, colocar o leite morno.
Polvilhar o leite com o fermento e deixar repousar por uns minutos, ou até a mistura formar uma espuma.
Adicionar a manteiga, o açúcar, a baunilha e 1 chávena da farinha e bater tudo.
Acrescentar-lhes o sal, a noz moscada e 1/3 da raspa do limão e voltar a bater. Adicionar os ovos e bater de novo.
Devagar, ir adicionando a restante farinha, até obter uma massa macia e peganhenta.
Remover a pá da batedeira e substituí-la pelo gancho.
Bater a mistura com a ajuda do gancho por mais 5 minutos, ou até obter uma massa elástica e moldável.
Untar uma taça com óleo.
Moldar a massa numa bola e colocá-la dentro da taça untada, virando-a, por forma a que toda a superfície da bola de massa, fique untada com o óleo.
Cobrir a taça com um pano e deixar repousar por cerca de 1 hora, ou até que tenha duplicado de tamanho.
Para fazer o recheio, numa taça misturar o açúcar e a noz moscada.
Adicionar o segundo terço da raspa do limão e trabalhar a raspa do limão no açúcar com a ponta dos dedos, por forma a que a mistura se assemelhe a areia fina.
Devagar, deitar colheres de sopa de sumo limão sore o açúcar, mexendo sempre.
Parar de adicionar o sumo do limão, quando a mistura estiver espessa e se assemelhar a areia molhada. Reservar.
Untar um tabuleiro de 22 x 33cm com manteiga (eu untei a forma de bundt).
Colocar a massa levedada sobre uma superfície ligeiramente enfarinhada e esticá-la em forma de rectângulo, com cerca de 25 x 38cm.
Pincelar toda a superfície do rectângulo com as 3 colheres de sopa de manteiga e sobre esta, espalhar o recheio uniformemente.
Enrolar o rectângulo, bem apertadinho, começando a enrolar por um dos lados maiores, como se de uma torta se tratasse, e apertar as extremidades, por forma a que o recheio não saia para fora.
Cortar a "torta" em 12 rodelas iguais, apertando um dos lados cortados, por forma a fechá-lo.
Colocar as rodelas, lado apertado e fechado, virado para baixo, no tabuleiro untado.
No meu caso, enrolei a torta em forma de caracol, escondi a parte final por debaixo do caracol e coloquei-o na forma.
Cobrir o tabuleiro ou a forma com uma toalha e deixar repousar por mais 1 hora, ou até, quase ter duplicado de tamanho.
Aquecer o forno a 180ºC e cozer os rolls por cerca de 35 minutos, ou até estarem firmes ao toque e dourados no topo.
Para preparar o recheio, bater o queijo até este este estar leve e macio.
Adicionar 1/4 de chávena do restante sumo de limão e voltar a bater até tudo estar bem combinado.
Adicionar o açúcar em pó e bater até obter uma mistura macia e cremosa.
Quando os rolls estiverem cozidos, regá-los com o icing de queijo e limão e polvilhar com o último terço da raspa do limão.
Eu optei por incorporar a raspa de limão na mistura do queijo creme.
Deixar os rolls arrefecer por cerca de 10 minutos antes de servir, mas, de preferência, servi-los ainda mornos.
