King's Cake / Bolo Rei.


This cake is very traditional and it's eaten all over Portugal around Christmas time and until the 6th of January which is the Day of Kings or the day when the 3 wise men visited the baby Jesus.
Traditionally the cake has a dried bean hidden inside and the person that gets the slice with the bean should be the one buying another cake.
ingredients (serves 6 - 8):
15g dried yeast
100ml lukewarm water
500g strong white flour
5g salt
70g caster sugar
zest of 1 lemon, grated
3 medium eggs
150ml dessert wine (I used Madeira wine)
100g unsalted butter, melted
75g raisins
40g soft dried mango, chopped
30g glacé cherries, was he and cut in half
50g sultanas
50g semi dried apricots, cut into small pieces
1 dried bean (optional)
to decorate:
1 egg, beaten with 1 tbsp of milk, to brush
200g mixed dried fruits, such as glacé cherries, figs, pears, sliced
50g flaked almonds
apricot jam, to glaze
icing sugar, to dust


method:
Mix the yeast with the water until dissolved.
Place the flour, salt, sugar and lemon zest in a bowl of an electric mixer fitted with the dough hook.
Add in the yeast mixture, the eggs and the dessert wine. Combine on a low speed for 1 to 2 minutes, to form a soft, elastic dough.
Add the melted butter and mix on low speed for 15 minutes, until the dough is soft, shiny and pulling away from the sides of the bowl to form a ball.
Add in the fruits and knead well by hand.
Cover the dough and leave in a warm place until doubled in size.
Turn the dough out onto a lightly floured surface and knead for 2 to 3 minutes.
If using, wrap the bean in clingfilm and knead it into the dough.
Shape the dough into a 20cm ball and flatten it slightly with a rolling pin.
Place on a baking tray lined with baking paper and using a 5cm pastry cutter, cut out a piece from the centre to give you a ring. Cover the ring with oiled clingfilm and leave in a warm place until doubled in size.
Heat the oven to 180ºC.
Brush the ring with the beaten egg and decorate with the fruits and almonds.
Bake for 20 minutes and if the fruits are getting to dark, cover loosely with foil. Bake for a further 15 to 20 minutes or until the cake is golden and sounds hollow when tapped underneath.
Remove from the oven and leave to cool.
Heat the apricot jam until runny and brush the cake with it.
Dust with icing sugar before serving.

Aqui fica então a receita do bolo rei caseiro que fiz este ano e que é delicioso e espero experimentem este Natal e faça parte da vossa mesa.
ingredientes (para 6 a 8 pessoas):
15g fermento biológico seco
100ml água morna
500g farinha de trigo para pão
5g sal
70g açúcar refinado branco
raspa de 1 limão
3 ovos médios
150ml vinho doce (eu usei vinho da Madeira)
100g manteiga sem sal, derretida
75g passas
40g manga seca (mas mole), picada
30g cerejas cristalizadas, lavadas e cortadas ao meio
50g sultanas
50g alperces meios secos, cortados em pedaços
1 fava seca (opcional)
para decorar:
1 ovo batido com 1 colher sopa de leite, para pincelar
200g frutas cristalizadas, em fatias
50g amêndoas laminadas
doce de alperce, para pincelar
açúcar em pó, para polvilhar
preparação:
Misturar o fermento com a água e mexer até este estar desfeito.
Numa taça, colocar a farinha, o sal, o açúcar e a raspa do limão.
Adicionar a mistura do fermento, os ovos e o vinho escolhido e com a batedeira equipada com o gancho para massas, combinar tudo a velocidade baixa, por cerca de 1 a 2 minutos, ou até obter uma massa mole e elástica.
Adicionar a manteiga derretida e bater, em velocidade baixa, por 15 minutos, ou até a massa estar brilhante e macia e se tenha descolado dos lados da taça, formando uma bola.
Adicionar os frutos e amassar com a mão, por forma a incorporá-los bem na massa.
Tapar a taça e deixar levedar por cerca de 1 hora, ou até ter duplicado de tamanho.
Colocar a massa sobre uma superfície ligeiramente enfarinhada e amassar por 2 ou 3 minutos.
Caso coloquem a fava no bolo, embrulhar a fava em película aderente e incorporá-la na massa.
Formar uma bola de cerca de 20cm e achaté-la ligeiramente com o rolo da massa.
Colocar a bola num tabuleiro forrado com papel vegetal e com um cortador de biscoitos com cerca de 5cm de diâmetro, cortar o centro da massa, por forma a obter um anel.
Cobrir com película aderente ligeiramente untada com óleo e deixar repousar até que tenha duplicado de tamanho.
Aquecer o forno a 180ºC.
Pincelar o anel com o ovo batido e decorar com a fruta cristalizada e as amêndoas laminadas.
Levar ao forno por 20 minutos e se a fruta começar a queimar, cobrir com papel de alumínio (sem apertar o papel). Cozer por mais 15 a 20 minutos, ou até o bolo estar douradinho e soe oco quando tapeado na base.
Retirar o bolo do forno e deixar arrefecer.
Aquecer o doce de alperce para que fique líquido e pincelar o bolo com o doce.
Antes de servir, polvilhar com açúcar em pó.
