Neapolitan bundt cake / Bundt Neapolitan.


As you can read here, the theme for this month Bundtmania is Neapolitan bundt cakes.
A Neapolitan is no more than a three colour cake and it is usually flavoured with vanilla, chocolate and for the third colour a dash of pink food colouring and/or sometimes, mashed strawberries are added.
As we all know by now, all the ingredients need to be at room temperature.
ingredients (serves 6 to 8):
250g butter, softened, plus extra for the tin
250g caster sugar
2 tsp vanilla paste
4 large eggs, lightly beaten
250g self raising flour, sifted
30g cocoa powder
30ml milk
pink food colouring, to taste
method:
Preheat the oven to 170ºC and grease a bundt tin with butter.
Place the butter, sugar and vanilla in a bowl and cream until pale and fluffy.
Add the eggs, a little at the time, beating well between additions.
When everything is well combined, add the flour and stir until just incorporated.
Divide the batter into 3 even parts and add the pink food colouring to one of them.
Add the cocoa powder and milk to the second part of the batter and mix well.
Keep the third batch plain.
Using a table spoon, put spoonfuls of the 3 mixtures randomly inside the prepared tin until all the 3 batters are finished.
Bake for 45 minutes or until a skewer inserted in the centre of the cake comes out clean.
Let the cake rest inside the tin for around 10 minutes before turning it over a wire rack.
A tip coming from my friend Mena is that at this point we should put the cake (still on the wire rack) inside a plastic bag until completely cool as this method will keep the cake moist for longer.
When completely cool, dust the cake with icing sugar.

Como podem ler aqui, o tema para esta Bundtmania é Neapolitan bundt cake.
Um Neapolitan não é nada mais que um bolo de 3 cores (castanho, creme e cor de rosa).
A camada creme é de baunilha, a castanha de chocolate e a cor de rosa é obtida acrescentando corante rosa à massa, ou até há, como vi em receitas que andei a ver por aí, quem lhe incorpore morangos esmagados.
Como não encontrei receita nenhuma que me agradasse a 100%, resolvi seguir o meu instinto e posso-vos garantir que o resultado, em termos de sabor e textura, não podiam ser melhores e mais perfeitos.
Como já todos sabemos a esta altura do campeonato, uma das características dos Bundt é que todos os ingredientes devem estar à temperatura ambiente.


ingredientes (para 6 a 8 pessoas):
250g manteiga, amolecida + extra para untar a forma
250g açúcar refinado branco
2 colheres chá de extracto ou pasta de baunilha
4 ovos grandes (L), ligeiramente batidos
250g farinha com fermento + extra para polvilhar a forma
30g cacau em pó
30ml leite gordo
corante rosa para culinária, a gosto
preparação:
Aquecer o forno a 170ºC.
Untar muito bem uma forma de bundt com manteiga amolecida.
Na taça da batedeira eléctrica, colocar a manteiga, o açúcar e a baunilha e bater muito bem, até obter uma mistura pálida e cremosa.
Adicionar os ovos, um bocadinho de cada vez, batendo bem entre cada adição.
Quando tudo estiver bem misturado, adicionar a farinha e envolver até tudo estar bem combinado, tendo o cuidado de não bater em demasia.
Dividir a mistura por 3 taças, por forma a obter mais ou menos a mesma quantidade de massa em cada taça.
Numa das partes da massa misturar o corante.
Na segunda, misturar o cacau em pó e o leite e misturar muito bem.
Deixar a terceira parte da massa da cor original.
Utilizando colheres de sopa, distribuir as massas pela forma.
Eu fui colocando colheres de massa das várias cores na forma, sem regra nem método, até as 3 cores terem terminado.
Levar o bolo ao forno por cerca de 45 minutos, ou até que um palito inserido no meio do bolo saia completamente limpo.
Deixar o bolo arrefecer dentro da própria forma por cerca de 10 minutos.
Após esse tempo, desenformar sobre uma grelha de arrefecimento.
Uma dica que me foi fornecida pela Mena (a nossa Pierre Hermé da Sibéria), é que se deve arrefecer o bolo dentro de um saco plástico, a fim de o manter húmido e fresco por mais dias e assim fiz. Peguei na grelha com o bolo em cima, enfiei ambos num saco plástico suficientemente grande e abafei o bolo até este estar completamente frio.
Depois de frio, polvilhar com açúcar em pó e servir.
