Cherry sorbet / Sorvete de cereja.


Now that the cherries are in season we need to make the most of them.
I love cherries and when I can hold my hands on a bowl of them, they don't last long.
This time, I bought a big batch, not just to eat raw but also to make this sorbet that was "smiling" at me since the day I got this fabulous and very beautiful book.
I just made half of the recipe but I leave you the original quantities.
ingredients (makes 1 to 1.2l):
50g caster sugar
50g liquid glucose
100ml water
2kg pitted fresh cherries
method:
Put the sugar, liquid glucose and water into a bowl over medium heat and stir until the sugar has dissolved.
Add the cherries and simmer for 5 minutes, until they are just soft but still retain their vivid colour.
Tip the cherries and poaching syrup into a blender and blitz until the cherries are well pureed.
Pass the cherry puree through a fine sieve into a bowl, pushing down on the pulp to get as much juice as possible.
Discard the pulp and leave to cool.
Transfer the cherry juice to the bowl of an ice-cream machine and churn until the sorbet is softly set. Scrape the sorbet into a container, cover and freeze for several hours until firm.

Agora que as cerejas estão no seu melhor, há que tirar o maior partido deste fruto maravilhoso e que eu adoro de paixão!
Um dia destes, comprei uma quantidade suficiente grande, que deu para, não só apanhar uma barrigada delas ao natural, como para fazer este sorvete maravilhoso, deste Chef que adoro e que é altamente qualificado.
Só fiz metade da receita, mas deixo-vos a receita completa.


ingredientes (para 1l a 1.2l):
50g açúcar refinado branco
50g glucose líquida
100ml água
2kg cerejas, descaroçadas
preparação:
Num tacho, colocar o açúcar, a glucose e a água.
Levar o tacho ao lume e mexer, sobre lume médio, até o açúcar estar dissolvido.
Adicionar as cerejas e cozinhar por 5 minutos, ou até a fruta estar macia. Não deixar cozinhar demais, para que as cerejas não percam a sua cor vibrante.
Deitar tudo no copo de um robot de cozinha e reduzir a puré.
Passar o puré por um coador fino, espremendo bem, por forma a retirar o máximo de sumo do puré.
Descartar o puré que ficar no coador.
Deixar arrefecer o líquido e assim que estiver frio, colocá-lo numa máquina de fazer gelados, seguindo as instruções do fabricante.
Quando estiver pronto e com uma consistência de sorvete macio, guardar num recipiente que possa ir ao congelador e congelar até estar completamente sólido.
