Chocolate cake with Chantilly cream, berries and pomegranate seeds / Bolo de chocolate com Chantilly, frutos vermelhos e bagos de romã.




Chocolate cake, filled with a delicious creme Chantilly and topped with my most loved fruits: Berries!!
A cake with a very delicate flavour, that is a showstopper and perfect for any occasion.
Note: The recipe says to bake the cake in one single 20cm round tin but I baked mine in two tins and then cut each cake in 2, so I could have 4 discs to assemble the cake. Otherwise, bake it in one single tin and cut it in 4 discs.
ingredients for the cake:
100g dark chocolate (70% cocoa solids), finely chopped
2 tbsp instant coffee granules
250 ml boiling water
125 ml hot milk
50g unsweetened cocoa powder
1 tsp vanilla bean paste or natural vanilla extract
250g unsalted butter, softened and chopped, plus extra for greasing
300g demerara sugar
200g dark brown sugar
450g self raising flour
4 eggs, lightly beaten
method:
Preheat the oven to 160ºC.
Lightly grease (one or two) 20cm round cake tin(s).
Place the chocolate and coffee in a bowl and pour over the boiling water.
Stir gently until melted and smooth and stand until cool.
Meanwhile, place the hot milk, cocoa powder and vanilla in a bowl and whisk to combine well. Set aside to cool.
Using an electric mixer, beat the butter and sugars until light and fluffy.
With the motor on low speed, add the flour, then the beaten egg and beat until just combined.
Add the chocolate and milk mixtures alternately and beat until well combined.
Spoon the batter in the prepared tin(s) and bake for 35 to 40 minutes or until a skewer inserted into the centre oi the cake comes out clean.
Let the cake stand in the tin for 10 minutes, then turn out and transfer to a wire rack to cool completely.



ingredients for the Chantilly cream:
500ml double cream
2 tbsp icing sugar
1 tsp vanilla paste or vanilla extract
method:
Using an electric mixer, beat all the ingredients on a high speed until soft peaks form.


to finish:
250g strawberries
handful of raspberries
handful of blueberries
handful pomegranate seeds
assembling the cake:
Split each cake in half so that you have 4 circles.
Place one circle of the cake on a serving plate and spread with 1/4 of the Chantilly cream.
Place the second layer on top of this and spread with another 1/4 of the cream.
Repeat with the third layer, finishing with the fourth cake layer.
Spread the top of the 4th layer with the remaining Chantilly cream and top with the fruit.

Hoje deixo-vos este bolo maravilhoso (especialmente para os amantes de chocolate) e, quanto a mim, lindo de se ver e admirar!!
Um bolo bastante delicado em termos de sabor e que combina duas coisas que adoro: frutos vermelhos e Chantilly!
Este bolo, como facilmente se percebe, fica bem em qualquer mesa, em qualquer ocasião e, palavras de quem o viu e comeu: É uma verdadeira "masterpiece"!!
Nota: A receita diz para cozer o bolo numa forma única de 20cm de diâmetro e, depois de frio, cortá-lo em 4, por forma a obter 4 discos.
Eu preferi cozê-lo em 2 formas de 20cm de diâmetro cada e cortar cada um deles em 2 discos, pois acho que é muito mais fácil.


ingredientes para o bolo:
100g chocolate preto (70% cacau), picado muito finamente
2 colheres sopa de café em pó
250 ml água a ferver
125 ml leite quente
50g cacau em pó (amargo)
1colher chá de extracto ou pasta de baunilha
250g manteiga sem sal, amolecida e cortada em cubos + extra para untar a(s) forma(s)
300g açúcar demerara
200g açúcar mascavado escuro
450g farinha de trigo com fermento
4 ovos, ligeiramente batidos
preparação:
Aquecer o forno a 160ºC.
Untar 1 ou 2 formas de 20cm de diâmetro.
Numa taça, colocar o chocolate picado e o café e cobrir com a água a ferver. Mexer delicadamente até o chocolate ter derretido e a mistura estar macia. Reservar para arrefecer.
Numa outra taça, colocar o leite quente, o cacau em pó e a baunilha. Mexer bem para combinar e reservar para arrefecer.
Na taça da batedeira eléctrica, bater a manteiga e os 2 tipos de açúcar, até obter uma mistura pálida e cremosa.
Com o motor da máquina em velocidade baixa, adicionar a farinha, seguida dos ovos e bater até tudo estar bem combinado.
De seguida, adicionar alternadamente as misturas do chocolate e do cacau, até tudo estar incorporado (não bater em demasia).
Dividir a mistura pelas formas e levar ao forno por cerca de 35 a 40 minutos, ou até que um palito inserido no centro do bolo, saia completamente limpo.
Deixar o bolo arrefecer nas formas por cerca de 10 minutos e de seguida, desenformá-lo sobre uma grelha, para completo arrefecimento.


ingredientes para o Chantilly:
500ml natas para bater
2 colheres sopa de açúcar em pó
1 colher chá de extracto ou pasta de baunilha
preparação:
Bater todos os ingredientes com a batedeira eléctrica, até que a mistura forme picos macios (atenção para não bater em demasia, senão obterá manteiga em vez de Chantilly).


para terminar:
250g morangos
1 punhado de framboesas
1 punhado de mirtilos
1 punhado de bagos de romã
montagem do bolo:
Cortar o bolo ao meio, por forma a obter 4 círculos.
Colocar um círculo do bolo num prato de serviço e barrar o topo com 1/4 da quantidade do Chantilly.
Colocar o segundo círculo de bolo em cima do primeiro e repetir o processo.
Repetir os passos anteriores com o terceiro e o quarto círculos de bolo, terminando por barrar a superfície do 4º círculo com o Chantilly restante.
Cobrir o topo do bolo com a fruta, decorando a gosto.
