Chess Cake / Bolo "Tabuleiro de Xadrez".



"Appearances can be deceptive" - Fact!
A cake, that is understated from the outside, will impress when you cut the first slice and it reveals a beautiful (not yet perfect), chequerboard of vanilla and chocolate in the inside.
That's the cake I'm leaving you today: A fantastic and gorgeous cake, that looks very normal and boring from the outside, but that's nothing like it inside...

Note: To make it easier to understand how to fill the tins with the batter, I found this images which show you exactly how the filled tins should look when you finish the pipping method.
ingredients for the cake:
350g unsalted butter, softened
350g caster sugar
6 medium eggs, at room temperature
1 tsp vanilla extract
350g self raising flour
couple of pinches of salt
50g cocoa powder
4 tbsp milk, at room temperature
method:
Preheat the oven to 180°C. Grease and line with baking paper, 3 x 20.5cm round deep cake tins.
Put the butter into a large mixing bowl or the bowl of a food mixer and beat with a wooden spoon or the whisk attachment until very creamy and "mayonnaise like".
Scrape down any mixture splattered on the sides of the bowl, then beat in the caster sugar a couple of tbsp at a time, scraping down the sides of the bowl from every now and then.
Beat well for a couple of minutes until the mixture is light and fluffy.
Break the eggs into a separate bowl, add the vanilla extract and beat with a fork until broken up.
Gradually beat the eggs into the butter mixture, a tbsp at a time, beating well after each addition and scraping down the sides of the bowl occasionally.
Add 1 tbsp of the flour with the last two additions of egg to stop the mixture curdling.
Sift the remaining flour and the salt into the bowl and carefully fold in using a large metal spoon.
Divide the mixture in half - using scales or by eye and put one half into a separate mixing bowl.
Sift the cocoa powder into one of the portions with 2 tbsp of the milk and fold in until well combined.
Fill one piping bag fitted with the plain nozzle with the chocolate mixture.
Add the remaining 2 tbsp of milk to the other bowl of cake mixture and fold in with a clean spoon.
Transfer this mixture into another piping bag.
Set all three prepared tins in front of you.
Take the bag containing the dark chocolate mixture and pipe a ring around the inside edge of one tin.
Pick up the bag containing the vanilla mixture and pipe a ring inside the chocolate ring.
Repeat, piping alternate dark chocolate and white vanilla rings, until the tin is filled. Do not spread or even out the mixtures.
Do exactly the same thing with the 2nd tin, starting with a dark chocolate ring around the edge.
For the 3rd tin, do the reverse - use the vanilla mixture to pipe the outermost ring, then pipe a chocolate ring inside and repeat until it is filled.
Bake the sponges for 22 to 25 minutes or until they are well risen and springy.
Run a round bladed knife around the inside of the tins to loosen the sponges, leave to firm up for 1 minute, then turn out onto wire racks and leave to cool completely.


for the white chocolate filling:
175g white chocolate (25%), very finely chopped
125ml whipping cream
50g unsalted butter
pinch of salt
method:
Put the 175g chocolate into a heatproof bowl.
Put the 125ml cream, 50g butter and salt (this helps it set well) into a small pan and heat until steaming hot but not quite boiling.
Pour the cream mixture onto the chocolate in a thin, steady stream.
Leave to stand for a minute, then stir gently until melted and smooth.
Leave for a few minutes until it is thick enough to spread easily.


ingredients for the dark chocolate covering:
300g dark chocolate (70%), very finely chopped
300ml whipping cream
method:
Make the dark chocolate ganache in the same way as the white.
Put the 300g chocolate into a heatproof bowl.
Heat the 300ml cream until very hot but not boiling and pour over the chocolate.
Leave to melt for a couple of minutes, then stir gently.
Leave until thick enough to spread.
decorations: 
dark or white chocolate, shaved, curled or grated
to finish the cake:
Set one sponge with a dark chocolate outer ring crust on a cake board or serving platter.
Spread with half the white chocolate ganache, then set the sponge with the white vanilla outer ring on top.
Spread with the remaining white ganache and top with the last sponge.
Leave to firm up.
When the dark chocolate ganache is nice and thick, using a knife, spread the ganache evenly over the top and sides of the cake.
Leave in a cool spot (but not the fridge) until set and firm, then decorate with the grated chocolate, chocolate shavings and/or curls.

A este bolo se aplicam 3 ditados populares:

Um bolo que, ao ser colocado em cima da mesa, aparentemente parece um bolo normal coberto com ganache de chocolate..., afinal não o é (ditado número 1 explicado), pois assim que se corta a primeira fatia, e ainda que não perfeito, revela um interior muito mais complexo e rico que a primeira impressão que causou, ou seja, a impressão de um bolito normal (e aqui se aplica o segundo ditado...).
Mais vale sê-lo que parecê-lo, pois para o bolo, como para tudo na vida, mais vale MESMO sê-lo que parecê-lo e acho que este nem precisa de explicações!
Andava para fazer este bolo há séculos, mas foi sendo adiado, pois não acreditava muito que conseguisse executá-lo, até que a semana passada, deixei-me de inseguranças e lá pus mãos à obra.

Nota: Não se deixem intimidar, pois é muito mais fácil que o que parece e para vos ajudar a perceber o quão fácil é, e como proceder na altura de encher as formas com as duas diferentes massas, vejam estas imagens, pois é este o aspecto com que as formas ficam depois de cheias.
Claro que, dependendo do tamanho do bico do saco de pasteleiro, poderão obter mais ou menos círculos de massa, mas isso não é importante. O importante é mesmo seguir o método alternado descrito na receita.


ingredientes para o bolo:
350g manteiga sem sal, amolecida
350g açúcar refinado branco
6 ovos médios, á temperatura ambiente
1 colher chá de extracto de baunilha
350g farinha de trigo branca com fermento
duas pitadas de sal
50g cacau em pó
4 colheres sopa de leite, à temperatura ambiente
preparação:
Aquecer o forno a 180ºC e untar e forrar com papel vegetal, o fundo de 3 formas, com cerca de 20.5cm cada.
Colocar a manteiga na taça da batedeira eléctrica equipada com o balão e bater até a manteiga estar cremosa e com uma consistência tipo maionese.
Caso não queiram usar a batedeira, usem uma taça normal e a colher de pau para bater bem a manteiga.
Raspar bem os lados e o fundo da taça com uma espátula e adicionar o açúcar, cerca de 2 colheres de sopa de cada vez, voltando a raspar os lados e o fundo da taça, de vez em quando.
Bater a mistura por cerca de 2 minutos, até estar estar bem macia e cremosa.
Entretanto, partir os ovos para uma taça à parte, juntar-lhes a baunilha e bater ligeiramente com um garfo.
Gradualmente e só um bocadinho de cada vez, adicionar os ovos à mistura da manteiga, batendo bem entre cada adição e raspando os lados e o fundo da taça de vez em quando.
Entre as duas últimas adições dos ovos, adicionar 1 colher de sopa de farinha, a fim de que a mistura não talhe.
Peneirar a restante farinha e o sal sobre a taça e, usando uma colher de metal, envolver tudo muito delicadamente.
Com a ajuda da balança, ou a olho, dividir a mistura em duas partes iguais.
A uma das partes da massa, adicionar o cacau em pó peneirado e 2 colheres de sopa de leite e envolver tudo muito bem, até obter uma mistura homogénea.
Colocar a mistura de cacau num saco de pasteleiro equipado com um bico de círculo redondo normal.
À segunda parte da massa (baunilha), adicionar as restantes duas colheres de sopa de leite e envolver bem, por forma a que a massa fique homogénea.
Transferir a mistura para um segundo saco de pasteleiro, equipado com um bico igual ao da massa de chocolate.
Colocar as 3 formas preparadas em frente e, com a mistura de chocolate, desenhar um círculo a toda a volta, junto ás paredes da forma.
Caso queiram, é nesta altura que deverão olhar para as imagens a fim de perceber como funciona o processo.
De seguida, pegue no saco de pasteleiro contendo a massa de baunilha e desenhe um círculo a toda a volta da forma, encostado ao círculo de chocolate.
Proceda da mesma forma alternada, até a forma estar cheia.
Para encher a segunda forma, proceda exactamente da mesma forma.
Para encher a terceira forma, comece com um círculo de massa de baunilha, seguido de um círculo de chocolate, alternando e prosseguindo, como para as duas formas anteriores.
Resumindo: O aspecto final das formas, serão duas formas que começam com um círculo exterior de chocolate e uma forma que começa com um círculo exterior de baunilha.
Levar as formas ao forno e cozer os bolos por cerca de 22 a 25 minutos, ou até terem crescido e um palito espetado no seu interior, sair limpo.
Quando cozidos, tirar os bolos do forno, passar uma faca à volta da forma e deixar os bolos na forma por cerca de 1 minuto, antes de os desenformar sobre uma grelha para completo arrefecimento.


para o recheio de chocolate branco:
175g chocolate branco (25%), finamente picado
125ml natas líquidas
50g manteiga sem sal
uma pitada de sal
preparação:
Colocar o chocolate numa taça resistente ao calor.
Colocar as natas, a manteiga e o sal num tacho ao lume e aquecer até estar quente mas sem deixar ferver.
Deitar as natas quentes em fio, sobre o chocolate e deixar repousar por 1 minuto.
Após 1 minuto, mexer até o chocolate estar derretido e obter uma mistura macia e cremosa.
Deixar a mistura repousar, até estar com uma consistência boa para barrar.
ingredientes para a cobertura de chocolate preto:
300g chocolate preto (70%), picado muito finamente
300ml natas líquidas
preparação:
Para fazer o ganache de chocolate preto, proceder exactamente como anteriormente para o chocolate branco. 
decorações: 
chocolate branco e/ou preto ralado, canudos de chocolate ou 


para montar o bolo:
Colocar um dos bolos com o anel exterior de chocolate num prato de serviço.
Barrar o topo do bolo com metade do ganache de chocolate branco e colocar o bolo com o anel exterior de baunilha em cima deste.
Barrar o topo deste bolo com o restante ganache de chocolate branco e, sobre este, colocar o segundo bolo com anel de chocolate no exterior.
Deixar que o ganache solidifique por uns minutos.
Quando o ganache de chocolate preto estiver com uma boa consistência, utilizar uma espátula e com a ajuda desta, barrar toda a superfície e lados do bolo com o ganache de chocolate preto e decorar o topo a gosto.
Deixar o bolo num local fresco (sem ser no frigorífico), até à hora de servir, a fim de que os ganaches solidifiquem.
