Lemon meringue bundt cake / Bundt cake de limão merengado.


Now that the weather is getting colder and colder, there's nothing much more satisfying than a cup of nice hot tea and a nice slice of cake.
Today I'm sharing with you this delicious lemon bundt cake, topped with light as a feather meringue.
ingredients (serves 12):
1 cup unsalted butter, softened
3 cups granulated sugar + 2 tbsp for the meringue
1/2 cup vegetable oil
1 tsp vanilla extract
6 large eggs
1 cup buttermilk
3 cups plain flour
1 tsp baking powder
1/2 tsp salt
1/4 cup fresh lemon juice
1 tbsp lemon zest
icing sugar, for dusting
2 egg whites
pinch of cream of tartar


method:
Preheat the oven to 170ºC. Grease and flour a 12 cup bundt pan and set aside.
Place the softened butter and sugar in the bowl of an electric mixer and beat until light and fluffy, 3 to 5 minutes.
Beat in the oil.
Mix the flour, baking powder, and salt in a separate bowl.
Keep the mixer running on low and add the vanilla and one egg at a time.
Scrape the bowl with a spatula, then, turn the mixer on low again and add the buttermilk and flour mixture until fully combined.
Scrape the bowl again, and beat in the lemon juice and zest.
Pour the batter into the prepared bundt pan and bake for 70 to 80 minutes or until a skewer inserted in the center of the cake comes out clean.
Remove the cake from the oven, cool for 30 minutes inside the tin, then flip out onto a cooling rack and cool to room temperature.
Dust the cake with icing sugar.


for the meringue:
Place the egg whites in a clean metal mixing bowl.
Throw in the cream of tartar and whip with the electric mixer (using the whip attachment) until frothy.
Add 2 tbsp of sugar and whip until firm and glossy.
Spoon the meringue into a piping bag with a large piping tip, then swirl the meringue on the top of the bundt cake.
Use a blow torch to toast the top of the meringue and then chill until ready to serve.

Agora que já começa a ficar cada dia mais frio, só apetece ligar o forno e fazer uns bolinhos bem deliciosos.
Não há muitas coisas que sejam muito mais reconfortantes que uma bela chávena de chá quentinho, acompanhada por uma deliciosa fatia de bolo caseiro e por isso partilho convosco a receita deste magnífico bundt cake de limão, coberto com uma leve camada de suspiro que, não só lhe dá um toque elegante, como nos deixa a suspirar imediatamente após da primeira garfada.


ingredientes (para 12 fatias):
1 chávena de manteiga sem sal, amolecida
3 chávenas de açúcar granulado branco + 2 colheres sopa para o suspiro
1/2 chávena de óleo vegetal
1 colher chá de extracto ou pasta de baunilha
6 ovos grandes (L)
1 chávena de buttermilk
3 chávenas de farinha de trigo branca
1 colher chá de fermento em pó
1/2 colher chá de sal fino
1/4 chávena de sumo de limão
1 colher sopa de raspa de limão
açúcar em pó, para polvilhar
2 claras de ovo
uma pitada de cremor tártaro


preparação:
Aquecer o forno a 170ºC.
Untar e enfarinhar uma forma de bundt com capacidade para 12 chávenas e reservar.
Numa taça, misturar a farinha com o fermento e o sal e reservar.
Na taça da batedeira eléctrica, colocar a manteiga e o açúcar e bater por 3 a 5 minutos, ou até a mistura estar pálida e fofa.
Adicionar o óleo e bater até este estar incorporado.
Com a batedeira em velocidade baixa, adicionar a baunilha e um ovo de cada vez, batendo bem entre cada adição.
Com uma espátula, raspar bem os lados e o fundo da taça e, mais uma vez com a batedeira em velocidade baixa, adicionar o buttermilk e a mistura da farinha, e bater até tudo estar bem incorporado, mas sem bater em demasia.
Raspar mais uma vez os lados e o fundo da taça com a espátula.
Adicionar o sumo e a raspa do limão e incorporar tudo muito bem.
Deitar a mistura na forma preparada e levar ao forno por 70 a 80 minutos, ou até um palito inserido no meio do bolo sair limpo.
Retirar o bolo do forno e deixar arrefecer por 30 minutos na própria forma.
Desenformar o bolo sobre uma grelha e deixar arrefecer completamente.
Polvilhar o bolo com açúcar em pó.
para o suspiro:
Colocar as claras de ovo numa taça de metal bem limpa.
Adicionar o cremor tártaro e bater, usando o balão, até as claras começarem a montar.
Adicionar as 2 colheres sopa de açúcar e bater até o suspiro estar firme e brilhante.
Colocar o suspiro num saco de pasteleiro equipado com um bico de abertura larga e decorar o topo do bolo (livremente e a gosto), com o suspiro.
Caramelizar o suspiro com um maçarico de cozinha e refrigerar o bolo até ao momento de servir.
