Victoria Sponge.


May is the strawberry month and I couldn't allow it to go by, without making my favourite cake of all times.
A Victoria Sponge!!
I love this British classic so much that, as soon as I saw this amazing recipe in Simmone Logue "In the Kitchen" fabulous book, I had to mark it down straightaway and this was the first recipe to be made.
As Marta invited us to cook with strawberries in May, I baked this amazing and delicious cake thinking of her.


ingredients for the cake (serves 12 to 16):
4 free range eggs, beaten
200g caster sugar
200g self raising flour
1 tsp baking powder
2 tbsp milk
200g unsalted butter, softened
for the filling and topping:
500g fresh strawberries
1 vanilla bean, seeds scrapped
150ml double cream
1 tbsp caster sugar
150g strawberry jam, preferably homemade
sifted icing sugar, for dusting


method:
Preheat tho oven to l90ºC.
Grease 2 23cm round cake tins and line with baking paper.
Place all the sponge ingredients in a large bowl and using an electric mixer, beat together until smooth.
Evenly divide the mixture between the cake tins, smoothing the surface with the back of a spoon.
Bake for 20 minutes or until golden.
Remove the cakes from the oven and leave to cool in the tins for 5 to 10 minutes.
Turn the cakes out onto a wire rack and leave to cool completely.
When ready to fill and top the cake, hull and slice half the strawberries, keeping the rest whole.
Put the cream in a bowl with the vanilla seeds and the caster sugar and whip to soft peaks, using an electric mixer.
Place one of the cakes in the middle of a serving plate.
Smear the jam over the top, then the whipped cream. Top with the sliced strawberries.
Place the second cake on top and decorate with the reserved whole strawberries and dust with icing sugar.

Maio é, por excelência, o mês dos morangos e como tal, não podia deixar passar o mês de Maio sem fazer o meu bolo favorito. O Victoria Sponge!
Aproveitando o convite da Marta para cozinhar com morangos durante o mês de Maio e os morangos magníficos de Yorkshire (Inglaterra) que comprei e que sabem, mesmo, a moranguinho do bom e que são da época, fiz este bolo pensando na querida Marta e levo-o assim, à sua mesa de Maio, toda ela recheada de receitas onde este fruto dos Deuses é rei. O morango!

ingredientes para o bolo (para 12 a 16 fatias):
4 ovos, de preferência biológicos, batidos
200g açúcar refinado branco
200g farinha de trigo branca com fermento
1 colher chá de fermento em pó
2 colheres sopa de leite
200g manteiga sem sal, amolecida
para o recheio e decoração:
500g morangos frescos
1 vagem de baunilha, aberta ao meio e sementes raspadas
150ml natas, para bater
1 colher sopa de açúcar refinado branco
150g doce de morango, de preferência caseiro
açúcar em pó, peneirado, para polvilhar


preparação:
Aquecer o forno a l90ºC.
Untar bem e forrar com papel vegetal, as bases de 2 formas de 23cm de diâmetro.
Colocar todos os ingredientes do bolo na taça da batedeira eléctrica e bater até obter uma mistura homogénea e cremosa (não bater em demasia).
Dividir a massa uniformemente pelas duas formas, alisando os topos com as costas de uma colher ou espátula.
Levar as formas ao forno e cozer por 20 minutos, ou até os bolos estarem douradinhos e um palito inserido no meio dos mesmos, sair limpo.
Retirar as formas do forno e deixar os bolos arrefecer nas próprias formas, por cerca de 5 a 10 minutos.
Findo esse tempo, desenformar sobre uma grelha e deixar os bolos arrefecer completamente.
No momento de servir, arranjar os morangos, retirando-lhes os pés e cortando-os em fatias verticais, reservando alguns morangos inteiros para a decoração.
Colocar as natas na taça da batedeira. Juntar a baunilha e o açúcar refinado e bater até obter picos ligeiros.
Colocar um dos bolos sobre um prato de serviço.
Barrar o topo do bolo com o doce de morango e em seguida, cobrir o mesmo com as natas batidas.
Distribuir os morangos fatiados pela superfície do bolo.
Colocar o segundo bolo sobre as camadas anteriores.
Decorar o topo do segundo bolo com os morangos reservados e polvilhar com o açúcar em pó.
