Melted Cheese Pizza / Pizza com Queijo derretido.


Another recipe for the super fantastic Deborah - Rainydaybites Cook Book Club.
A recipe from the book of the month, which is the fabulous Yvette van Boven "Home Baked" book (I told you about it in this post).
This time it's a savoury recipe. Pizza!
Who doesn't like pizza? I don't know anyone that don't like it!
Although this pizza is slightly different from the conventional pizza, it is, in all ways, as good as..., I mean...
BETTER!!

ingredients (serves 8):
100ml lukewarm water
11g instant yeast
250g plain flour, plus extra for dusting
1 tsp sea salt
1 egg, beaten
400g mozzarella (not buffalo mozzarella; it's too wet), coarsely grated
grated zest of 1 lemon
several sprigs fresh sage (or flat leaf parsley), chopped
1/2 red chili pepper, minced (you can remove the seeds, if you like)
sea salt and freshly ground black pepper
1 tbsp olive oil, plus extra for greasing
method:
Pour some of the lukewarm water into a bowl and add the yeast. Leave for about 7 minutes until all of the yeast has dissolved and it starts to foam a little.
Combine the flour and salt in a bowl. Make an indentation in the middle and pour in the egg. Then add the dissolved yeast and maybe also the remaining lukewarm water. Check whether this is necessary (the dough should be pliable and non-sticky).
Knead the dough until smooth.
Remove the dough front the bowl and continue kneading on the countertop for about 10 more minutes.
Put the dough in a bowl that has been lightly greased with olive oil and cover with plastic wrap. Set aside in a warm spot to rise for 1 hour and 30 minutes.
Press down on the risen dough with your fist to force out the air, then cover and let rise for another hour.
Preheat the oven to 250ºC, or as hot as possible.
On a flour-dusted work surface, press out the dough ball into a large, flat round.
Transfer to a large flour-dusted baking sheet.
In a bowl, combine the mozzarella, lemon zest, sage, and red pepper.
Generously season with salt and black pepper. With clean hands, shape the cheese mixture into a ball and place it at the center of the dough round.
Gather the edges of the dough, fold them around the filling, and crimp them so they form a rosette. You've now basically made a pizza bag holding a cheese ball inside.
Make sure all edges of the rosette have been securely joined together. Then flatten the dough by carefully pressing down on the rosette in a circular motion. Keep doing so until you've got a flat, cheese-filled pizza of, say, 25cm in diameter.
Use a knife to make star-shaped slits on top, deep enough to reach the cheese filling.
Brush the top with the olive oil. Slide the pizza into the oven and bake for 12 to 15 minutes, or until golden brown.
Cut into slices and serve.

Quem não gosta de pizza? Cá eu não conheço ninguém...
Esta pizza é um bocadinho diferente das pizzas tradicionais, mas nem por isso menos deliciosa, ou melhor...
Absolutamente magnífica!!


ingredientes (para 8 fatias):
100ml água morna
11g fermento de padeiro seco
250g farinha de trigo branca + extra para a bancada
1 colher chá de sal
1 ovo, batido
400g queijo mozzarella (não usem a "buffalo mozzarella", pois é muito molhada para esta receita. Usem mozzarella curada), ralado
raspa de 1 limão
folhas de salva ou salsa, a gosto, picada
1/2 malagueta vermelha, picada (retirem-lhe as sementes se não gostarem de muito picante)
sal e pimenta preta do moínho
1 colher sopa de azeite + extra para untar
preparação:
Numa taça, colocar uma parte da água e o fermento.
Deixar por cerca de 7 minutos, ou até o fermento fomar uma espuma na superfície.
Numa outra taça, combinar a farinha e o sal. Fazer um buraco no meio e adicionar o ovo.
Adicionar a água com o femento e, se necessário, a água restante. Talvez não seja necessária a água toda. A massa deverá apresentar-se maleável mas não pegajosa.
Amassar até a massa estar macia.
Retirar a massa da taça e continuar a amassar sobre a bancada por aproximadamente 10 minutos.
Colocar a massa numa taça untada com azeite e tapar com película aderente. Deixar repousar por cerca de 1h. e 30 minutos.
Findo esse tempo, espancar a massa, a fim de lhe retirar o ar. Voltar a tapar e a deixar repousar por mais 1 hora.
Aquecer o forno a 250ºC, ou à temperatura máxima do vosso forno.
Sobre uma bancada enfarinhada, estender a massa até obter um círculo grande.
Transferir o círculo de massa para um tabuleiro polvilhado com farinha.
Numa taça, combinar a mozzarella, a raspa do limão, a salva ou salsa e a malagueta picada. Temperar generosamente com sal e pimenta preta do moínho.
Com as mãos bem limpas, formar uma bola com a mistura do queijo e colocar essa bola de queijo, no centro da massa esticada.
Pegar nas extremidades do círculo de massa e uni-las no centro, como se de uma trouxa se tratasse.
Juntar as pontas da massa e uni-las bem.
Entretanto, começar a espalmar e a prensar a pizza em movimentos circulares, a partir do centro, por forma a espalmá-la e a obter um círculo de cerca de 25cm de diâmetro.
A ideia, é obterem um disco de 25cm cujo interior está recheado com a mistura do queijo.
Com uma faca, fazer cortes em forma de estrela na superfície da pizza, mas que sejam suficientemente profundos para chegar ao recheio.
Pincelar a superfície da pizza com azeite e levar ao forno por cerca de 12 a 15minutos, ou até esta estar cozida e bem douradinha.
Servir em fatias.
